December DBs' Challenge - Gingerbread House - Casetta di panpepato


The December 2009 Daring Bakers’ challenge was brought to you by Anna of Very Small Anna and Y of Lemonpi. They chose to challenge Daring Bakers’ everywhere to bake and assemble a gingerbread house from scratch. They chose recipes from Good Housekeeping and from The Great Scandinavian Baking Book as the challenge recipes

I followed Y's recipe.
I had made before gingerbread houses so it was not that difficult to me, but I found this dough too dry (I should have used less flour I suppose). And the result, as you can see in the pics, is not a smooth surface at all! Anyway, it was fun to make it and this house was the main decoration on the drinks table at Christmas.
Unfortunately I lost step-by-step pics of rolling, cutting the dough and assembling the house: I used a simple icing glaze mixing white of egg, lemon juice drops and powdered sugar to the right texture.

Scandinavian Gingerbread (Pepparkakstuga)

from The Great Scandinavian Baking Book by Beatrice Ojakangas


1cup - 226g butter, room temperature
1cup - 220g brown sugar, well packed
2 tablespoons cinnamon
4 teaspoons ground ginger
3 teaspoons ground cloves
2 teaspoons baking soda
½ cup boiling water
5 cups - 875g all-purpose flour*

* well, I suppose something is wrong in wheigh conversion of cups/grams because that amount is too much, my dough was very stiff, 650/700 g should be enough


1. In a large bowl, cream the butter and sugar until blended. Add the cinnamon, ginger and cloves. Mix the baking soda with the boiling water and add to the dough along with the flour. Mix to make a stiff dough. If necessary add more water, a tablespoon at a time. Chill 2 hours or overnight.

2. Cut patterns for the house, making patterns for the roof, front walls, gabled walls, chimney and door out of cardboard.

3. Roll the dough out on a large, ungreased baking sheet and place the patterns on the dough. Mark off the various pieces with a knife, but leave the pieces in place.

4. [I rolled out the dough on a floured bench, roughly 1/8 inch thick (which allows for fact that the dough puffs a little when baked), cut required shapes and transferred these to the baking sheet. Any scraps I saved and rerolled at the end.]

5. Preheat the oven to 190°. Bake for 12 to 15 minutes until the cookie dough feels firm. After baking, again place the pattern on top of the gingerbread and trim the shapes, cutting the edges with a straight-edged knife. Leave to cool on the baking sheet.

1 tazza - 226 g di burro a temperatura ambiente
1 tazza - 220 g di zucchero di canna
2 cucchiai di cannella
4 cucchiaini di zenzero in polvere
3 cucchiaini di chiodi di garofano in polvere
2 cucchiaini di bicarbonato di sodio
½ tazza di acqua bollente
5 tazze - 875 g di farina*

* il mio impasto era troppo secco, secondo me 650/700g sarebbero stati più che sufficienti, ma l'ho realizzato dopo

1. In una terrina mescolare il burro e lo zucchero fino ad ottenere una crema. Aggiungere le spezie. Mescolare il bicarbonato di sodio con l'acqua bollente e aggiungere all'impasto insieme con la farina. Mescolare per ottenere un impasto duro. Se necessario aggiungere più acqua, un cucchiaio alla volta. Trasferire in frigo per 2 ore o tutta la notte.

2. Tagliare i cartamodelli per la casa: tetto, pareti anteriore e posteriore, mura laterali, camino e porta.

3. Stendere la pasta carta forno, applicare i cartamodelli sulla pasta e ritagliare i vari pezzi con un coltellino o una rotella.

4. Oppure stendere la pasta su un piano infarinato, ritagliare i vari pezzi e poi trasferirli sdelicatamente su carta forno.

5. Preriscaldare il forno a 190°. Cuocere per 12/15 minuti finché la pasta biscotto risulta dorata e compatta. Dopo la cottura, porre ancora una volta i cartamodelli sui vari pezzi di biscotto e ritagliare eventuali sbavature (questo finchè la pasta è ancora calda). Lasciare raffreddare sulla teglia.

Mie osservazioni:
questo impasto mi sembra un po' troppo asciutto e difficile quindi da maneggiare, secondo me va diminuita la quantità di farina. Si vede infatti bene dalle foto che la pasta non è bella liscia. Non è un lavoro difficile da eseguire, l'importante è farsi i cartamodelli in cartoncino dei vari pezzi della casa. per unire i vari pezzi e incollare le decorazioni di caramelle ho usato una semplice glassa fatta con albume, gocce di succo di limone e tanto zucchero a velo quanto ne occorre per avere una consistenza densa di glassa. Ma si potrebbe usare anche una glassa semplice fatta con succo di limone e acqua nella stessa quantità e zucchero a velo fino a consistenza desiderata. Purtroppo ho perso le foto del ritaglio dei pezzi e dell'assemblaggio della casetta, ma qui trovate ottime spiegazioni passo passo.
Questa casetta ha fatto bella mostra di sè sul tavolo degli aperitivi alla vigilia e al pranzo di Natale!
