Crestine alla ricotta - BBD # 40

Il mio Bimby compie 10 anni proprio in questi giorni e, nonostante qualche piccolo acciacchetto  iniziale dovuto al troppo lavoro, devo riconoscere che funziona ancora a meraviglia (toccando ferro e legno sotto il pc, sia mai che mi gufi proprio ora!).
E ieri l'ho festeggiato con una ricetta di Nilla, la mia presentatrice preferita, che all'epoca fece dono a noi acquirenti di un bel cd con tante ricette da lei testate personalmente. Ecco allora una frolla per deliziosi biscotti ripieni che casca proprio a fagiuolo, come si suol dire, per il Bread Baking Day # 40 ospitato questo mese dalla stessa Zorra, che chiede di panificare con il curd, ossia, un prodotto ottenuto dal caglio del latte, come la ricotta, il quark o il paneer.
Ho farcito principalmente le crestine con la cioccolata avanzata delle uova di Pasqua (che non si finisce mai di riciclare!), ma questa frolla è deliziosa anche per crostate o piccole tartellette; inoltre è perfetta per gli intolleranti alle uova  (non ne contiene alcuno!) e priva totalmente di zucchero o altro dolcificante.

Per circa 50 crestine di 8 cm. di diametro:

250 g di ricotta
250 g di farina 00
100 g di burro freddo
una bustina di lievito per dolci
un pizzico di sale

a piacere per farcire:
marmellata, possibilmente densa 
gocce di cioccolato
crema gianduia
zucchero a velo

Nel boccale: burro a pezzettini, ricotta, farina, lievito e sale, impastare per 30" a vel. 5. 
A mano: con la punta delle dita sbriciolare il burro con la farina, aggiungere  poi ricotta, lievito e sale e  lavorare brevemente l'impasto (meglio se ci si aiuta con la spatola così da maneggiarlo il meno possibile) finchè ben amalgamato.
Con l'impasto ottenuto fare una palla, avvolgerla nella pellicola e metterla in frigo a rassodare almeno mezzora.
Stendere la frolla ad uno spessore di mezzo  centimetro, ritagliare dei cerchi con il tagliabiscotti (se dentellato saranno più carini), farcirli nel mezzo a piacere (fare la prova con uno per la quantità di ripieno da mettere, non deve fuoriuscire altrimenti poi si carbonizza in forno) e piegarli a metà sigillando bene a formare una mezzaluna (io preferisco inunmidire leggermente con dell'acqua il bordo esterno che appoggia sul piano di lavoro per farli aderire bene e premo leggermente con la parte esterna del pollice).
Disporre sulla teglia ricoperta di carta forno e cuocere a 180° per 15/20 minuti, dipende dalla grandezza. Raffreddare e spolverizzare con zucchero a velo.
Nilla suggerisce anche di ritagliare la pasta a rettangoli con una rotella dentata e fare delle caramelle, io  ci ho provato ma con molto scarso risultato estetico!

 Ricotta cookies

My Thermomix turns 10 in these days and I am so happy it still helps me nicely in the kitchen!
When I bought it, my Thermomix seller Nilla gave a nice cd to all buyers, full of delicious recipes she personally tested. And these cookies are one of them, and they nicely fit for Bread Baking Day # 40, hosted this month by our lovely  founder Zorra. She chose baking with curd as theme (meaning any dairy product obtained by curdling milk with rennet or an edible acidic substance such as lemon juice or vinegar, so cottage cheese, ricotta, quark and paneer are welcome).
I mainly filled the cookies with left over Easter eggs chocolate, finely chopped. (to tell you the truth I baked a few ones with jam but I am not still very confident with it, I always make a mess, outcoming from the cookies!). But this ricotta pastry is delicious also for tarts and pies, very suitable for those intolerant to eggs (not even one inside!) and completely sugarless.

For about 50 cookies, 8 cm. diameter:

250 g ricotta
250 g flour 00
100 g  butter
a bag of baking powder (16 g)
a pinch of salt

for the filling, at your pleasure:
jam
chocolate chips
hazelnut cream or nutella
icing sugar 
In the mixing bowl: butter into small pieces, ricotta, flour, baking powder and salt and knead 30" speed 5.
By hand: mix diced butter with flour using your fingertips and making crumbs, add ricotta, salt and baking powder and briefly knead until amalgamated (easier if you use a kneading spatula and mix by hand the less you can).
Shape the dough into a ball, wrap in plastic wrap and refrigerate at least half an hour.
Roll out the pastry half a centimeter
thick, cut into small disks with cookie's cutter, stuff in the middle at your pleasure (make a test for the amount of filling you need for each biscuit, it should not come out to avoid awful burning in the oven) and fold in half to shape a crescent moon (I prefer to wet with a brush or your finger the outer edge of the pastry to be sure it seals well).
Place on baking tray with parchment paper and bake at 180° for 15/20 minutes, depending on size. Let cool and dust with icing sugar.
A little suggestion by Nilla:  cut the dough into rectangles and shape into candies, I tried but the result was not so good looking, missing some sort of cookie-appeal!

nn metto tutto quel burro ma 50 gr. appena fatte sono buone poi diventano un po' dure ma a me piacciono lo stesso.
